春夏秋冬 - 夏 2020 (Shunkashuto - Summer 2020)
The Shunkashuto Series has been one that we incorporated from nearly the beginning of Kyoto Brewing Co. Saison is a style that we love and one that drew our founders into the craft brewing world, and this series is a way to showcase its breadth and seasonality.
Similar to last year, this year’s Sunkashuto Summer is a sour Saison brewed for maximum refreshment amidst Kyoto’s oppressive summer heat. Unlike last year, however, the hop profile has changed significantly, as has the yeast strain used. Hops were selected more to encourage the creation of citrusy flavors and aromas during fermentation than for the contribution of the hops themselves. Lemon, lychee, and grapefruit were just a few of the wide variety of words we were using to describe the progression of flavor as this beer fermented.
The yeast strain is one that is not quite as aggressive as traditional strains, meaning it leaves behind a bit more body and residual sweetness. Instead of the aggressive spicy and peppery phenols common in many Saisons, this strain retains a bit more of a gentle citrusy ester character. This along with the hops has worked to create an almost grapefruit-like flavor and high level of refreshment for this year’s Shunkashuto Summer.
