真の目覚めセット (True Awakening Set)
We have been dreaming of working with brettanomyces and barrels for some time. While we finally were able to start doing so last year, one of the reasons why beers like these are so special is the time it takes to make them. Even after starting, we had to wait a long time for them to finally come together.
Another special point is that you don’t know for some time whether they ever really will work out or not. As a result, it can feel like persevering through a thick fog, not knowing where you will come out until finally you emerge and see where you are.
This emergence can be perhaps seen as an awakening and, with these two techniques being both quite different but at the same time significant for us, we wanted to release some of them as a set, and allow people to try our first ever wild beer, brewed in collaboration with Luc La Fontaine from Godspeed, followed by our first ever barrel-aged beer, awaking from 14 months of hibernation in whisky barrels.

Winter's End (Belgian Imperial Stout - Barrel-Aged Version)
Our longest ageing to date, this beer took a long time to find a balance within the barrel. The result is a dry and complex Belgian Imperial Stout with rounded edges that still retains the unique chocolate and licorice notes of the original product.
Bonds of Friendship (Belgian Golden Ale w/ brettanomyces)
Inspired by Orval, this beer co-fermented with Brettanomyces was not only a learning experience, but also a culmination of our long friendship with Luc “Bim” Lafontaine.
