A saison fruity yet crisp and dry, light but with complexity

As a celebration of the new public green space that opens in March 2023, we brewed this beer. The "shiru" means to know, and the name also plays on the word "Higashi", a reference to Higashihonganji, and the East, where the sun rises for a day in the gardens, with a thought towards the refreshing beer that will quench the thirst at the other end of the day.[Brewer's Voice]We were very fortunate to be invited to be a part of the Monzen Mirai project, the creation of a new park area in front of Higashihonganji temple, just north of Kyoto station. This time we went along with the concept of creating a beer that we thought a gardener at the temple would want to drink at the end of a long day.
Saison is a great style due to its breadth. With the theme of this beer being "what a gardener wants to drink at the end of a long day," we looked back to Saison's roots as the beer for farmhands.
The beer is light and refreshing, and a low ABV means it is highly drinkable. We used a special Saison yeast that leaves a little more sweetness and body to accent the soft and sweet character from wheat and spelt. Riwaka hops from New Zealand were selected to add hints of sweet citrus fruit, contributing to the refreshing nature of the beer.
