One of the fun things that has come out of the last couple of years has been our forays into secondary bottle fermentation of saison beers. The saison was the style that we first decided to make when we launched KBC but, until we released Pilgrim's Respite, we never followed the traditional method of bottle conditioning, which has the advantage of making the beer resistant to negative change, and instead allows the beer to age and evolve into something often much better than when the beer is fresh.

We have been monitoring the progress of these products and, having seen them "come of age", we have made a set of our two current releases.
