To show just how much difference water can make, we decided to make the same exact IPA, but brew it once with a soft water profile more common to Pilsen, Czech Republic, and once with very hard water more at home in Burton-on-Trent, England. All the other ingredients were kept exactly the same and brewed in a way to fit the style if a classic American IPA. This set is really all about showing the difference created by two different soft and hard water profiles: with Nan (meaning “soft”) being 45 ppm of hardness and Koh (meaning “hard”) being 324 ppm. What you should find is that Nan has a smoother, rounder flavor and bitterness while Koh is sharper, more minerally, and harsher in its perception.
