A Belgian dessert tripel with pineapple and coconut, conceived with Australian baked goods in mind!

[Food Pairing]
South-east Asian salad with lime, white fish and tartar sauce sandwich, citrus and soft cheese dessert
[Naming]
This collaboration, made with Deeds Brewery in Australia, was made once on their side with the infusion of Japanese ingredients. On our side, we did the opposite, taking inspiration from Australian baked goods. With the name on their side being Lost in Translation, we decided to go for another cliched phrase, but this time a Japanese one, meaning Frog in the Ocean. It refers to the idea of a frog who wants to find a bigger pond to play in than the well that he came from. This seemed particularly apt for such an international collaboration!
[Brewer's Voice]
Collaborations are a way for us to explore beer styles and techniques that we normally wouldn't try on our own. This could be because of preference or lack of experience with certain ingredients. When working closely with other brewers, it is much easier to get outside of our comfort zone, and that certainly happened here with this unique beer!

This international collaboration saw our Australian compatriots express Japanese sweets in a Belgian Quad. On this side of the ocean, we looked to Australian sweets and presented those through the base of a Belgian Tripel.

We saw that a lot of cookies and cakes in Australia utilize a combination of fruit and coconut, so that became the base inspiration for this beer. We decided to go with pineapple thinking that its flavor would go well with the fruity nuance of our house yeast. Combining this with coconut milk powder rounds out the flavor and gives a bit of a tropical nuance. Finally, many desserts utilized almond shavings as accents, so we finished off the trio with an addition of powdered almond.

The resulting beer is one of the more unique ones we have made here at KBC. It definitely retains its Belgian roots with yeast driven flavors and high ABV. A touch of acidity from the pineapple increases drinkability and gives an extra perception of dryness, while the coconut and almond combine to give a moist yellow cake-like impression. While we felt a bit like a fish out of water (or a frog in the ocean!) when making this beer, we are excited by the final product and appreciative of all that we learned from our peers in Australia!
