Tropical hops and hibiscus combine in this light pink IPA

[Character]
White IPA brewed with Hibiscus and tropical flavored hops. Flavors of tropical fruit, berries and flowery aromas accompany this IPA with a light pink color from the dried hibiscus flowers. A wheat forward malt bill gives this beer a soft mouthfeel while keeping the beer light on the palette.

Zucchini escabeche with orange and onion, fried rice with white fish and umeboshi, beef rump tagliata with balsamico sauce.
[Naming]
Modern craft beer is really possible thanks to the wonders of modern logistics. While there is something great about using local ingredients, the truth is that for the best hops and malts, and for the variety of such ingredients, we need to get them in from a variety of places.

For this two part mini series, we also decided to play with ingredients from a ilttle further afield. For the first of the two, we looked yonder south, with the addition of hibiscus.

[Brewer's Voice]
Hibiscus is quite unique as a herb for the combination of flavours it offers, from tangy, tart and sweet on one hand, to herbal, earthy, flowery and bitter on the other. Much like how you use hops in a beer, you can adjust its used to bring out more of some and subdue some of the other flavours. This made it a perfect candidate for use in an IPA where we could blend these rich characters together.

As a base for the beer, we aimed for a white IPA, with high amounts of wheat adding to the body for a creaminess that can help to smooth out the sharper elements of the hibiscus. Knowing that hibiscus contributes a bitterness, we went light on the bitterness from the hops, and instead went for hops more soft and tropical in nature.

We thought it better to layer the notes in a way that could complement the complexity of the flower, and went for Rakau, Kohia Nelson, Mosaic and Luminosa. Rakau adds a tropical stone fruit character, Kohia Nelson brings passion fruit, and Mosaic offers berry and melon, with Luminosa rounding everything out with peach, mango and marionberry. Hibiscus was added twice, some on the hot side at the tail end, limiting the contact time with the beer to avoid astringency, and then finally we added some on the cold side to contribute more of the flowery aroma and the pink hue. The result is a beer that both looks and tastes like a perfect beer for summer weather!
