A wheat-heavy modern IPA, maximising Mosaic hop character forward with the power of thiols.
[Character]This Mosaic focused DDH IIPA holds nothing back. Utilizing modern thiols and hybridized yeast, and supporting New Zealand hops, this Hazy IIPA is tropical, juicy, and loaded with flavour and aroma.[Naming]The idea of “Shingyoso” comes from calligraphy, and represents three different lines of thought.
"So" might be considered the more free and artistic. It might be more controversial in more conservative camps, but one might consider this to be the realm within which the greatest creativity may be found.
Similarly, this beer has stepped well away from the original WCIPA origins, being rough and hazy, but also taking advantage of the almost uncontrollable thiols.[Brewer's Voice]Our 3rd installment in the Mosaic series is where we take things up a notch again. Starting from a base of 50% wheat and 50% golden promise, this white IPA is centered around thiol extraction and biotransformation. We paired Mosaic, an already high thiol hop, with Motueka and Southern Cross. Motueka is high in bound thiols; to unlock these flavor compounds we added this hop into the mash to allow the enzymes to “unlock” these compounds. Southern cross is known as a “thiol booster” and is paired with some late addition Mosaic to boost the aroma compounds of all 3 hops. We used another new yeast for this beer called Pomona. This is a hybrid yeast strain designed to contribute strong tropical aromas while also helping to utilize hop Thiols. These Thiol Compounds contain strong aroma characteristics that can very greatly from the hop oils themselves. By using these techniques, we hope to show off how diverse this great hop can be depending on how you use it.
