Classic style Hefeweizen using Japan grown raw wheat and barley.
[Character]A soft and creamy wheat presence gives this beer a bread like characteristic with a medium body for this Hefenweizen. On the nose is a mild banana and clove character from esters produced by the Wit yeast also contributing a moderate haze to the beer. [Food Pairing]Lemon and white pepper infused sausage, red chicory and blue cheese salad, sweet and sour fried white fish[Naming]As part of a double collaboration with Zakkoku Kobo, we decided to make two very different weizens, one being a lovely orthodox representation of this wonderful classic German style, and the other his heretic cousin, one that will have many of the creators of this old style rolling in their graves![Brewer's Voice]When the brew with Zakkoku Cobo was being discussed, we knew we wanted to do something that would help capture the flavor of the region and the beers they are brewing up there. Zakkoku Cobo has a wonderful relationship with local farms that grow a variety of grains used by not only the brewery but other local bakeries as well. When this was discovered, there was no hesitation that we wanted to brew a beer that showcased those ingredients. Additionally, Zakkoku Cobo makes some wonderful wood conditioned beers, and their yeast profile is a big component of what gives those beers their character. Using raw Barley and Wheat in addition to a German yeast strain that produces wonderful clove and banana phenolics, a Hefeweizen was the natural fit to really let these ingredients shine. Raw grains are not typically used in brewing since without the malting and germination process you lose the ability to convert starches into sugars. To get around that we had to do a series of rests and use a mixture of enzymes to breakdown the more complicated proteins and starches into simple sugars the yeast could consume. The benefit of using raw grains is that you get a wonderful complexity to the malt character and some nuanced character of the terroir the malt was grown.
