春夏秋冬 - 冬 2019 (Shunkashuto - Winter 2019)
Shunkashuto Winter 2019 definitely closes out the year with a bang with an ABV of 8.0%. Despite the high alcohol content, the liberal use of simple sugar keeps the beer light and refined, meaning it is intensely dry and drinkable. While normally Saison brewed in this style utilize traditional hops, this year we went for a southern hemisphere touch with Motueka and Nelson Sauvin. The lime-like flavor of Motueka creates a foundation for the white grape character of Nelson Sauvin, both of which meld perfectly with the pear, apple and spice notes from the Saison yeast. While used sparingly, malted rye further enhances these flavors by not only adding a touch of mouthfeel but also a slight hint of spice. This is one of our favorite renditions of the Shunkashuto series to date, and we hope it is the perfect match for your holiday plans!
