While the style for each season of the Kimagure series is set in advance, the recipe itself is left up to the whims of the brewer. Having the general boundary set in advance means that we get to experiment with variations of hops and malt to explore the boundaries of the Red IPA style.

This year saw a significant but subtle change to the malt recipe, relying more heavily on Golden Promise for a sweet and full background character. We didn't want to give up on Red Rye Crystal, one of our favorite ingredients, but felt that its character was too strong in the past, so reduced the amount we used. That means the flavors of more traditional crystal malts dominate this beer with a nice balance of malt flavor to body without being too sweet.

Hops were chosen to express both ripe and young tropical fruit flavors and aromas. While these are usually more easily understood in lighter color IPAs, the sweetness of the malt character allows their flavor to be enhanced while their aroma dominates in the nose.

This year's release of Aki no Kimagure is a bit different than the direction it has taken in the past, but so far it is a direction that everyone at KBC is liking!
