While our house yeast is a Belgian strain, most of our beers use hops from America, malt from Germany, and water from Kyoto, making for a unique and international blend. We thought it would be fun, however, to try an all European beer, starting with Belgian malt. The final product, Oushuu no Kaze (or 'European Wind'), is a gentle balance of malt flavours and hop character with a nose dominated by our house yeast.
